Welcome to Week 2 of our Summer Menu series! This week’s menu brings together a familiar mix of high-protein Western-style breakfasts and diverse cultural dinners. Let’s dive into this week’s delicious lineup!

Breakfast Delights

As usual, start your mornings right with these high-protein breakfasts:

  • Monday: Cottage Cheese & Fruits
  • Tuesday: Spinach, Ham & Cheese Omelet, Toast, and Fruits
  • Wednesday: Greek Yogurt Parfait
  • Thursday: Avocado & Egg on Toast with Fruits
  • Friday: Cottage Cheese & Berries on Toast
  • Saturday: Ricotta, Tomato & Spinach Frittata
  • Sunday: Avocado & Smoked Salmon on Toast with Fruits

Lunchtime Favorites

Keep lunchtime simple and enjoyable with leftovers and easy meals:

  • Monday to Friday: Leftovers from the previous dinners – Quick, convenient, and no food waste!
  • Saturday: Burger, Fries and Salad
  • Sunday: Vietnamese Rice Paper Rolls, Gỏi Cuốn (recipe from Hungry Huy)

Dinner Extravaganza

End your day with these easy dinner ideas:

  • Monday: Meatless Monday with Quick and Easy Braised Tofu (recipe from the Woks of Life), serve with Rice
  • Tuesday: Vietnamese Shaking Beef, Bò Lúc Lắc (recipe from Hungry Huy), serve with Rice or Bread
  • Wednesday: Take a break from cooking with your favorite store-prepared meal or take-out/delivery (e.g., pizza, lasagna, etc.)
  • Thursday: Spaghetti & Meatballs (recipe from Once Upon a Chef) with a Green Salad
  • Friday: Stir Fry Friday with Fish Stir Fry (recipe from the Woks of Life), serve with Rice
  • Saturday: Enjoy dining out at a restaurant or at a friend’s or family’s home
  • Sunday: Grilled Chicken Kebabs and Grilled Corn Salad (recipes from the Mediterranean Dish)

Notes

  • Skip the Rice, Bread and Fries: If you want a low-carb meal, feel free to skip the rice, bread and fries and enjoy the other delicious components of the meal. My husband usually eats a lot of rice, bread and fries, while I sometimes skip these for a lighter and healthier meal. But I love them, too!
  • Prep Ahead Idea: This week, you can prepare the meatballs on the weekend and freeze them for a super easy weeknight dinner.
  • Batch Cooking Idea: Double the recipe for the meatballs and freeze them for easy packed lunches for your kids or another dinner for your whole family on a night where you don’t feel like cooking.
